Potential New Flavor?

Once a month, my husband and I get together with 20-30 of our friends for a big dinner party. Our friend Ken is an AMAZING cook, and it’s a lot of fun. A good variety of people go, from little kids to some elderly folks, so as far as guinea pigs go… it doesn’t get much better. These are the lucky people who were present for the birth of the Bananas Foster cake a month ago.

Anyway.. Before we met, my husband’s favorite dessert was Pistachio Pudding Salad.. Very midwestern. For those of you not “in the know”, it’s pistachio pudding, crushed pineapple, and mini marshmallows. A dessert that I’m pretty sure is served at every holiday and potluck event EVER to happen in Minnesota. Not really my thing, but he loves it… so I figured I’d try to turn it into a cake.

So, here it is: my nameless (for now) new creation. Vanilla cake with pistachio pudding, crushed pineapple, and mini marshmallows in it, layered with marshmallow fluff. Gotta be honest – I don’t really like it, so it’s hard to get excited about it. The reaction of everyone ELSE is another story – it went over really well! Aside from not really being “my kinda thing” – which I’d expected in the first place – it didn’t quite have the visual appeal I was looking for. The marshmallows disappeared almost completely, leaving only tiny whitish chunks.

I think it’s probably worth tweaking, given the positive response it received.. It’s just weird to develop a flavor I’m sure I won’t like, you know? I have some ideas on how to make the marshmallows stick around. Will post an update when I get around to tweaking it!

In the meantime, if anyone has a great idea on what to name it.. Let me know! I think I’d like something Minnesota themed, and was leaning towards “Minnesota Potluck Cake”.. but that name lacks a certain.. Caché to it.
