Sushi Rice

Wednesday, July 29th, 2009

3 cups short grain rice
3 1/4 cups water
1/3 cup seasoned rice vinegar
3 Tbsp Sugar
1 tsp salt

Rinse rice well. Add rice and water to rice cooker, and cook as usual.

In a small sauce pan, mix rice vinegar, sugar, and salt. Heat on low setting until sugar and rice dissolve. Cool.

Once rice is cooked, spread the hot rice into a large, non-metallic mixing bowl. Fold the cooled vinegar mixture into the rice carefully, being careful not to mush it. Allow rice to cool, and use right away.

Makes enough for 10+ rolls

Tuna, Avocado, and Mango Maki (Sushi) Rolls

Wednesday, July 29th, 2009

To say that Sushi is a favorite meal option in my house would be a pretty big understatement.

While we love to go out to various sushi restaurants, sometimes we’re feeling either cheap or antisocial enough that we just want to have sushi at home – and this is a favorite recipe for that!

Southwest Fondue

Southwest Fondue

1 cup mexican beer (like Corona)
3 tbsp lime juice
1 each – red, yellow, orange, jalapeno, fresno, and habanero peppers, seeded and chopped
6 cloves garlic, peeled and chopped
1 small onion
1.5 lbs sharp cheddar cheese, grated
4 tsp cornstarch

In a medium sized saucepan, heat beer and lime juice on low-medium.

Put peppers, garlic, and onion in food processor or blender, and let it rip till finely chopped. Increase heat to medium or medium high, add pepper mixture to the beer, cook till everything is soft, and onion is translucent, about 5 minutes

In a large bowl, toss grated cheese with cornstarch. Add a good sized handful to the pot, and mix well till it is completely melted in. Add another big handful, and repeat until all the cheese is added, completely melted, and smooth (aside from the pepper bits, of course!)

Transfer to fondue pot if desired, and serve with cubes of bread, tortilla chips, blanched broccoli, cauliflower, and asparagus, and slices of apples and pears.

Spicy Tropical Chicken Stir Fry

This recipe is great as a low carb (and mostly “Paleo” friendly) entree. Diet food never tasted so good!

If you really need your starches, substitute rice for the zucchinis!

Sweet Ecstasy Cookies

Monday, July 20th, 2009

These cookies are utterly insane. My mother originally came up with the recipe, and I tweaked it to suit my tastes. The result is something so addictive, it’s gone by some Not-quite-G-Rated nicknames over the years. When friends request them, it’s always “crack cookies”. You get the picture.
