“Midwest goes Southwest” Hotdish

If you’re not in / from Minnesota, you may not be familiar with “hot dish”. A cultural staple here, no potluck is complete without one. Here’s my favorite take on the tradition:

“Midwest Goes Southwest” Hotdish

1 medium onion, thinly sliced
1 jalapeno pepper, finely chopped
2 poblano peppers, thinly sliced
4 cloves garlic, chopped
2 cups frozen corn
2 cans black beans (15 oz each)
2 cans condensed cheese soup
½ cup salsa .(preferably hot)
2 tbsp olive oil
1 lb chicken breast, chopped
½ tsp crushed chilis
1.5 tsp cumin powder
2 cups shredded monterey jack cheese
2 lb bag tater tots

Heat oven to 350.

In a pan, sweat onion, jalapeno, and poblano peppers till soft. Add garlic, corn, and beans, heat through.

Pour vegetable and bean mixture into a 9 x 13 casserole dish or baking pan. Stir in condensed soup and salsa, mix well.

Heat olive oil, add chicken, crushed chilis, and cumin. Heat till fully cooked. Stir into casserole dish mixture.

Evenly sprinkle shredded cheese over mixture. Arrange tater tots in a single layer on top of the cheese. Bake at 350 for 50 minutes. Serve hot!
