Grandma’s Perogie Recipe

Saturday, August 29th, 2009

Recently, I was craving perogies something fierce. At the time, I settled for crappy store bought frozen perogies, but vowed to make a batch of homemade perogies soon.

Growing up, my grandmother used to make amazing perogies, and I’ve never forgotten that – most else pales in comparison! Of course, she was the first person I called when I decided to try my hand at making them. She graciously provided her recipe, as well as an endless rant of tips. LOL.

My husband had never tried homemade perogies, and I’d never actually made them before.. so it was an interesting experiment. Luckily, he was a huge help in the kitchen, and they actually whipped up a lot quicker than I thought they would! I had remembered them being an all-day kind of task, this was more like 2 hours, start to finish. This recipe may look involved, but it’s actually really easy. SO
good. Om Nom.. num.. yummmy!

Makes 4 or 5 dozen perogies – Enjoy!

Now THAT is a hardcore wedding!

I love Twitter. It’s been really cool to get to know clients – and random strangers! – as well as come across ALL kinds of weird, random links to interesting information, posts, photos, etc. @bridetide posted this today, and I couldn’t NOT pass them along in my blog!

This couple was married while suspended from hooks! Ouch.

Damn, does that ever look painful. I love how happy they look, though! Original post can be found HERE.

My “Dream Trend” for wedding cakes.

Sunday, August 23rd, 2009

Although you wouldn’t know it by looking at our galleries, I’m a huge fan of doing marbled cakes. Not the “chocolate / vanilla” marbled interior, mind you.. but simply decorated cakes featuring marbled fondant. It’s just something we don’t receive a lot of orders for, and I think that’s a shame. It’s about time marbled fondant gets some time in the spotlight!

Not only is marbling fondant kinda fun, but it’s always neat to see how the design turns out in the end. It’s a great way to have a unique cake that is classy and elegant.. and it definitely gets people talking. What a great way to bring your wedding colors into the cake!

Here are some examples:

An example of how marbling can be used for a more subtle effect:

And, just for fun… here’s a pic of how crazy we can get with marbling the INSIDE of the cake:

(This was the cake we served at Twin Cities Pride Festival a couple years ago!)

By controlling the colors – and proportion of colors – as well as the degree to which we marble the fondant, we can achieve any effect, from subtle to eye popping!

Something to consider for your future cake orders, perhaps? :)

My, how times change.

Shortly after we opened back in 2007, we showcased at a wedding show in St Cloud.  We were asked NO LESS THAN 100 times – “Do you watch ‘Ace of Cakes’?”. A lot of “You’re just like Ace of Cakes!” as well.

At the time, we’d never heard of it.  We were left scratching our heads afterwards, and ended up subscribing to Dish Network so we could see what the big deal was.

Last night, we were showcasing at a different event (will blog about that eventually!), almost 2 years after that first wedding show… and the comments / comparisons were flying once again!

However, this time, EVERYONE was asking if we watched “Cake Boss”! Not a single question or comparison to “Ace of Cakes” this time!  Is Duff yesterday’s news already? Wow.

For the record, no.. I don’t watch Cake Boss. Tried once, it’s just way too over-the-top for my tastes.  I’m not a huge fan of reality TV anyway, and they REALLY play things up on Cake Boss.  I’d pick Duff and crew over that any day!

Truth be told though, I don’t watch much cake tv at all.  I live, breathe, and even DREAM cake… if I’m gonna watch TV, gimme House, CSI, or (guilty pleasure) Degrassi!

Cake Mix!

Thursday, August 20th, 2009

No, this post isn’t about instant-cake-in-a-box, it’s about music!

I’ve been pretty lame about blogging for the last while. Was thinking about that this morning as I was working like a madman to the tune of “Knowing it’s you”. Well, that’s not entirely true. I was thinking “I should twitter a link to this song!”, as I’ve been doing fairly regularly… when the blog-neglect guilt set in! LOL. Decided that music may make a good blog entry topic, and here I am!

When many people think of artists at work, they picture stoic settings, classical music, etc. Personally, I like to crank up both the volume and bass on Euro tunes. Seriously considering black lights and a disco ball at my next kitchen, but I may be a little odd. I digress…

Here’s a list of songs on my current favorite “Cake Mix” CD. I throw them together every once in awhile, but this one has some serious staying power – it may just be my ultimate Cake Mix! I went ahead and found youtube links to each song, in case my readers aren’t familiar with a song / songs. In no particular order:

Knowing it’s you – Aluna (On youtube: Here)

All in my Dreams – Laya (On youtube: Here)

Headbone Connected – Daisy Dee (On youtube: Here)

Automatic Lover – Real McCoy (On youtube: Here)

Together Again – Sash! (On youtube: Here)

Grace Kelly (Bimbo Jones Mix) – Mika (On youtube: Here)

Right Type of Mood – Herbie (On youtube: Here)

Touch the Sky – Cartouche (On youtube: Here)

Memories – Netzwerk (On youtube: Here)

I Dream – Waldo’s People (On youtube: Here – Contains Nudity)

Think About the Way – Ice MC (On youtube: Here)

Freedom – DJ BoBo (On youtube: Here)

Elements – Neo Cortex (On youtube: Here)

L’Amour Toujours – Gigi D’Agostino (On youtube: Here)

So that’s it. Would love to hear what my fellow cakers would include on your lists. Non cakers, as well!

NB: In case you were wondering, the creation of most of our cakes usually involves a Macarena break at some point! LOL! )

Pesto-Shrimp Stuffed Crust Pizza

Sunday, August 16th, 2009

Pizza is usually good in any form, especially when homemade from scratch. Even a basic pepperoni pizza can be a thing of beauty… but when you play with the basic elements, changing the sauce and adding interesting ingredients, pizza can be so much more!

My husband and I *adore* freshly made pesto, and grow a sick amount of basil in our backyard to keep our addiction well supplied. (300 individual plants, at last count!). This recipe caters to both our love of pesto, as well as our love for tons of cheese – it is a definite family favorite. Fancy enough to serve when company is coming over, as well!

Mocha Nanaimo Bars

Picture it. Vancouver, Canada… 1986. I was a little girl on the trip of a lifetime – experiencing Expo ‘86. I was young enough that most of the memories from it are now a blur, or reduced to general feelings and thoughts (”That was cool!”), but 2 few things stood out then, and still remain fresh in my mind today:

Reuben Poppers

They say that great minds think alike – and fools seldom differ – but sometimes, my husband scares me!

It’s been probably a year since I last made these. Today at the grocery store, I spontaneously decided to make these for supper. Didn’t say a word to my husband about it, thought it would be a nice surprise for him. (more…)

Mango Mojito Ice Cream

Sunday, August 9th, 2009

This recipe makes a HUGE amount of ice cream – 3 quarts – more than most home ice cream makers will handle at one time. The recipe can be halved or quartered… or you can do as we do, and make it in batches. It’s so ridiculously good, you’ll be glad to have it on hand!
