Fruitcake Cookies Recipe

I’ve been a bit conflicted over posting this recipe, much like I was for posting the Pecan Pie Cookies recipe.

Once again, this is a recipe that I’ve had – and used – for years. Today, I have NO idea where it came from, either from when I got it, or originally. I’m guessing I got this from a fellow caker (with permission to use it for my business!)… but who? Did they create it? Did they get it from someone else? I have no idea. :(

I don’t like how food celebrities tend to just comb the web, looking for recipes to swipe and claim as their own, so I feel a bit icky when considering doing (somewhat) the same. Does honesty about it mitigate the “gross” factor at all?

Thing is, these cookies were SUPER popular, back when I was selling holiday cookie trays. While fruit cake has a bd reputation on its own, these were loved by so many people – including those that hated fruitcake with a passion! It’s been a popular request for a blog entry ever since!

Again, hope I’m not losing any baker’s cred by posting this, but I know it’ll make a bunch of people happy. Especially Davonna. (Hi Nani!) (more…)

Maraschino Cherry Nanaimo Bars Recipe

Happy Thanksgiving to my fellow Canadians! I am getting a little green eyed, hearing and reading about all of the yummy food you guys are planning to snarf this weekend. Plus, I mean… long weekend! Could *totally* use one of those, but we’re gonna be busting our butts on exterior repairs this weekend. Spare a thought for us? LOL!

Anyway, in honor of the holiday weekend, I’m gonna share an awesome version of our national dessert – the Nanaimo bar.

As I’ve previously mentioned, on my Mocha Nanaimo Bars Recipe, I do my bars a little different than the norm, just in that I prefer a lot more filling.

I love the bright color and flavor of these cherry Nanaimo bars – they make a really pretty addition to any holiday dessert table!

“Game Day” Fruity Glazed Popcorn Recipe

Glazed popcorn was the first recipe I ever had published, back when I was in grade 5 (Classroom cook book)! I used to make this for bake sales in my front yard, as gifts, and whatever. I guess it was only appropriate that glazed popcorn was also the first recipe I posted on this blog, way back in September 2008!

While a single batch of this popcorn is a ton of fun – and super tasty – on its own, doubling the batch while using 2 different colors? Awesome.

For this batch, I used grape and lemon Jello flavors – to replicate “Minnesota Vikings” colors! While the lemon was vibrant enough on its own, I find that the darker colors need a little more “oomph”. I highly recommend adding a few drops of gel food coloring. To achieve this depth of color, I used a few drops of Americolor’s “Regal Purple”. Perfect!

Between the flavors / colors of Jello available, & the huge variety of gel food colors available, you can totally customize the flavors and colors to match any sports team out there.

Not so into sports? Consider using your wedding colors for bridal shower favors … or light colors for baby showers! Orange popcorn can be combined with ANY flavor – dyed black – for Halloween popcorn, and festive holiday popcorn could be made with cherry and lime Jello! The possibilities are endless!

This is an insanely easy recipe to make, and only takes about 10 minutes per flavor.

Maple Walnut Baklava

So… this weekend is the start of October. Yikes. That realization sent us into a stress frenzy recently – we still have a TON of exterior work to get done before the weather gets too cold/snowy!

For me, the start of October still means that Thanksgiving is right around the corner. Canadian Thanksgiving falls on October 10th this year. We usually try to celebrate both Thanksgivings, with different menus. This year… I’m not so sure I can pull everything together in time. That sucks :(

I always look forward to the variety of Canadian dishes we serve for the October Thanksgiving. Tortiere, Butter tarts… Mmmm. This year, I had been looking forward to a new favorite: Maple Walnut Baklava. Kind of a Canadian-Greek crossbreed, and SO tasty.

Sigh. It’s probably for the best, having gone gluten free again.

Anyway, baklava is actually quite easy to make, despite what you may have heard. Just make sure your filo / phyllo dough has thawed properly, and it should work up quickly for you!
