Yesterday, I was supposed to post something Thankgiving-y… but got sidetracked in favour of a big political rant. So, with less than a week to go before Thanksgiving, here’s that post 🙂

We were up in Duluth this weekend, enjoying the fall colours, and photographing the Northern Lights for our first time ever. (My first time seeing it!).

All that crisp, clean air and warm autumn colours put me right in the mood for baking.

On a grocery stop, we passed a display of cinnamon buns, and my mind wandered. What about doing “pumpkin spice” buns? With actual pumpkin in the bread? Of course, I need to put maple syrup in it… and here we are!

I actually started with my Buffalo Chicken Buns recipe! I don’t make a ton of cinnamon buns, usually preferring savoury baking. A few tweaks, and these were AWESOME. Says my husband:

“It’s autumn in my mouth! I love the complexity of the flavours all together. It’s well balanced, with nothing overwhelming anything else. The soft bready texture with the creamy glaze, the stickiness from the filling, and the crunch of the walnuts all compliments and contrasts each other, and keeps it all interesting.”

It’s been almost exactly 1 year since I set up a Kickstarter campaign for the gluten free cookbook I’d been considering developing. It was wildly successful – almost double-funding! – and I worked really hard to product the BEST recipes for gluten-free cooking and baking.

To celebrate the occasion, I am sharing a ridiculously awesome recipe with you: gluten free maple pumpkin pie. The crust is a bastardization of one in the book – I decided that I wanted to do a slightly sweeter, spiced-up version for this particular pie recipe.

This tastes as good as it looks, with or without the maple cream topping (which I adore!). Everything you could want in a pumpkin pie – creamy, rich, with the right amount of spice, and a flaky crust. Perfection!

As I’d mentioned back in my Poutine recipe post, my coming out of the closet as an immigrant has had quite the positive effect on this blog. You now have my poutine recipe, a crazy original recipe for Pumpkin Spice Nanaimo Bars, as well as my original (was stil closeted at the time!) recipe post for Mocha Nanaimo Bars.

Well, today I’d like to introduce you to another delicacy from my homeland – Butter Tarts!

Yep, these are the goodies mentioned in Len’s “Steal my Sunshine” (in the radio version, anyway, not this video!). They’ve been around forever, and you can get them anywhere in Canada… Tim Horton’s.. gas stations.. even boxes of factory made ones, sort like Little Debbie stuff.

Because they’ve been around forever, there are about a million versions of it. Some use brown sugar, some use white… most use corn syrup, I use maple… you get the idea.
